Apple muffins
IngredientsWet mix
- 2 cups grated raw apples (I left the skin on)
- 1/2 cup brown sugar
- 1/2 cup oil
- 2 eggs
- 1 teaspoon vanilla essence
- 1 cup wholemeal self-raising flour (or 1 cup wholemeal flour and 1 teaspoon baking powder)
- 1 cup self-raising flour
- 1/4 teaspoon baking soda
- 2 teaspoons cinnamon
- Preheat oven to 200°C and grease a 12 hole muffin tin.
- Thoroughly combine the wet mix ingredients.
- Combine the dry mix ingredients and mix thoroughly into the wet mix.
- Place the mixture into prepared pans and bake for 20 minutes.

Mmm yummy! I love baking but I haven't done it in a reeally long while. These muffins look perfect for autumn, I will have to try them soon!
