Ok, so they're not all that fast, but this is a no-cook slice which you make and leave to set in the fridge. It's a rich combination of fruit and vanilla; the final result is actually quite heavy!
Fast bars
Ingredients
- 80 g butter
- 1/3 cup firmly packed brown sugar
- 1 egg
- 250 g plain sweet (wine) biscuits, crushed
- 2 cups mixed fruit/sultanas
- Vanilla icing
- 1 1/4 cups icing sugar
- 1 tablespoon butter, melted
- 1/2 teaspoon vanilla essence
- 1 tablespoon boiling water
Method
- Melt butter and brown sugar together. Mix in egg and add to crushed biscuits.
- Stir in fruit and press firmly into a bar/slice tin. Refrigerate.
- To make icing, combine all ingredients. (I found that I needed to use 1 1/2 times the icing mixture to cover the whole slice.) Cover slice with icing and cut into pieces to serve.
Makes 24 pieces.
